This role assists Nutritional Services Manager in the operation of food and nutrition activities for the Brown County Community Treatment Center assuring compliance with standards of practice and regulatory requirements.
Essential Duties
Provides supervision for Food and nutrition services employees.

Purchases food supplies; writes food specifications; develops standardized recipes.

Maintains inventory of food and cooking supplies.

Completes work schedules for employees; adjusts schedule to cover employee vacation, sick time and
emergency situations.

Completes employee performance appraisals.

Shares on-call duties with the Nutritional Services Manager.

Monitors quality improvement operational procedures for the department, including food procurement, production, tray line, meal service, dish room, and equipment cleaning.

Attends staff meetings, attends in-service and outside organization training sessions.

Processes diet orders and diet change orders.

Maintains department records, order guides, purchase orders, and requisitions.

Requests equipment repair orders and maintains records on equipment repair.

Plans and presents in-service education for food and nutrition services department employees.

Assists with tray line, the receipt of deliveries and storage of supplies in the absence of available personnel.

Caters special functions.

Maintains the confidential nature of client and business information.
Relates to clients when appropriate in a therapeutic manner.

Assists with training of new staff.

Completes and maintains necessary documentation according to applicable requirements, codes and
policies.

Performs related functions as assigned.
Minimum Qualifications Required
Education and Experience:

Dietetic Technician Associate Degree, plus 2 years hospital/long term care/corrections supervisory experience; or Dietary Managers Diploma, plus 4 years supervisory hospital/long term care/corrections experience; or Bachelor of Science Degree in dietetics or foods and nutrition preferred; or any combination of education, training and experience which provides the necessary knowledge, skills and abilities.

Licenses and Certifications:

Required: ServSafe certification
Preferred but not required: Dietetic Technician, Registered or Certified Dietary Manager/Certified Food Protection Professional.
Knowledge, Skills & Abilities
Knowledge of dietetics in both clinical nutrition and the administration of institutional dietary services, including knowledge of normal and therapeutic nutrition as related to menu planning; procurement; preparation and storage of food and food service equipment; food specifications; and principles of supervision.

Knowledge of employee relations, ethics, labor laws and standards of regulatory agencies governing food service operations.

Knowledge of hazards involved in working with food service equipment, chemicals and work environment.

Knowledge of and ability to utilize a computer and the required software.

Ability to communicate effectively both orally and in writing.

Ability to establish and maintain effective working relationships with staff, and the public.
Ability to select, assign and supervise employees.

Ability to organize, plan activities and problem solve.

Ability to understand and carry out policies and procedures.

Ability to interact with clients in a therapeutic manner.

Ability to maintain the confidential nature of client and business information.

Ability to meet time schedules.

Ability to work the required hours of the position.
